One day I was ordering Uber Eats for lunch and I found this amazing restaurant named “Sunshine’s Health Food Store and Vegetarian Deli” in Houston, Texas and became enamored with their vegan nachos so much that I decided to recreate my own quick version of vegan deluxe nachos.
Ingredients (makes 6 servings)
- 3 blocks of Daiya Cheese (Cheddar Style Block OR Smoked Gouda Style)
- Find at Albertson’s, Whole Foods, Sprouts, Kroger, etc.
- 1 package of Trader Joe’s Beefless Ground Beef (or any other beefless beef from Whole Foods)
- 1 cup of Pico de Gallo
- 1 cup of guacamole
- 1 bag of tortilla chips
- 2 tsp of Tony Chachere’s
- ¼ tsp of cayenne pepper
Directions
Step 1: Empty the contents of the Beef-less Ground Beef into a bowl
Step 2: Cut the cheese blocks into cubes
Step 3: Melt the cheese by microwaving it for 1 minute and 30 seconds the first time and then stir. Continue to melt it by microwaving it in 30 second increments and stirring in between each increment.
Step 4: Heat the beef-less ground beef for 3 minutes until it is hot.
Step 5: Place a handful of chips onto a plate
Step 6: Scoop the desired amount of cheese, guacamole, and Pico de Gallo onto the chips
Step 7: Grab a roll of napkins because it will get messy and enjoy!
