Cashew Cheese Spinach Fettuccine Alfredo

Ingredients

  • 3 bags of spinach
  • 2 boxes of fettuccine noodles
  • 2 cups of cashews
  • 4 tbsp. of nutritional yeast
  • 3 1/2 cups of almond milk
  • 1 tsp. of salt
  • 1 tsp. of black pepper
  • 1 1/2 tsp. of Italian seasoning
  • 1/2 tsp. of cayenne pepper
  • 1/4 cup of olive oil

Directions

Step 1: Boil 2 cups of cashews in a medium pot of water for 45 minutes.

Step 2: Once the cashews have finished cooking, drain the water from the cashews and add the cashews into a blender or food processor with 1/2 cup of almond milk.

Step 3: Once you have blended the cashews and almond milk, it will produce a paste. Add that paste, Italian seasoning, salt, black pepper, cayenne pepper, and nutritional yeast into a large bowl and whip in the rest of the almond milk to make the Alfredo sauce.

Step 4: Saute the 3 bags of spinach in a heated pan with the 1/4 cup of olive oil.

Step 5: Boil a pot of water and once the water has reached a boil, add the two boxes of fettuccine. Once the noodles have thoroughly cooked, drain the water from the pasta and add it back to the pot.

Step 6: Stir the cashew sauce and spinach into the pot with the noodles. Let it cook on medium heat for 5 minutes and then serve!
